What country are you posting from? Even without a contract there will legislation like the Fair Trading Act, and Consumer Guarantees Act like we have here in New Zealand, the former of which will have guidelines about what a consumer (your client) can _reasonably_ expert from a person they are paying to provide a Service (you).
But this has nothing whatsoever to do with Photoshop. I'd hazard a guess that there are at least as many websites and forums covering this sort of situation, than there are around Photoshop. Actually I take that back — there will be subjects with more web cover than Photoshop. But Goggle is your friend

I have a feeling it will be difficult tracking down the section you need from the FTC site, but something that comes to mind is the Open Talk forum on DPReview because heaps of photographers fall into the same trap as yourself. There was a high profile case a few months back where Gary Fong came to the rescue, which I thought huge karma considering the fortune Gary has made selling daft gadgets to gullible photographers. Which brings to mind another phrase you could Google 'Photographers and the law'.
